When I was younger, my mom used to make cabbage unlike some people I knew. She would sauté it with butter, not too soft but with a little bite.
And the perfect pairing with cabbage…Corned Beef!
I have to admit, I was a little intimidated with corned beef as a dish. Even while in culinary school, it wasn’t something I was apt to just making for dinner. Then I was asked specifically to make it and decided to just take the dish on for a challenge of my skills.
After about the 12th or so time of making corned beef and cabbage, I decided to just make it my own. I generally just put it in the oven covered and cook it low and slow. That makes the meat tender and juicy.
So for Sunday dinner, I decided to make the perfect pairing with a few other comforting sides. Corned beef and cabbage, fried corn and homemade cornbread. I have to say, this meal was so good I have to say I’ve come a long way with making corned beef and cabbage. It’s almost one of my favorite combinations to make for Sunday dinner.
