Lemon, garlic, and oil

In this next installment of the “make your own” series, I would like to mention another simple idea to creating your own infused oils. I love using olive oil when cooking, but giving your typical oil a kick can also add flavor to your dish as well. This simple recipe is easy and will last you a while.

Two of my favorite flavors are lemon and garlic. I would use both in everything I made if I could. Lemon and garlic infused oil is something that will be sure to give your food a bit of sprucing up.

Lemon and Garlic Oil Infusion

  • 12 whole garlic cloves, peeled
  • 2 cups extra virgin olive oil
  • 2 lemons
  • 2 pinches of red pepper flakes
  • 1/2 teaspoon kosher salt


Place the garlic in a small saucepan with the olive oil and bring to a boil. Lower the heat and simmer for 10 minutes. With a vegetable peeler, cut large strips of zest from each lemon and add it to the garlic oil. Add the red pepper flakes and salt, and allow the oil to sit at room temperature until the flavors are infused. Store the oil in the refrigerator.

Here are a few tips. Some may think to smash the garlic because it may be assumed it will give more flavor. In this instance, smashing the garlic will release the flavor before infusing. Since you are bringing this to a boil, that will in turn burn the garlic essence. You will have a burnt taste in your oil, which will further sour the oil. Adding the pepper flakes is optional, you can also add a little less if you want less heat.
